Hey guys, I have another clean eating weeknight meal plan for you here. I have actually been really getting a kick out of doing these myself, and I have to say, weeknights have become so much easier when it comes to food.
So here is my plan for this weeks meals:
MONDAY
I am hoping to pick up some shrimp from the local farmers markets on Sunday, so, all going well, we will be enjoying this Shrimp and Wild Rice Casserole from The Seasoned Mom on Monday.
TUESDAY
I am going to go with the day of the week catchy titles and have a Taco Tuesday here with these Fancy Mushroom and Smashed Avocado Tacos. Really delicious, but I really need to re-do these photos too!! Don't let the bad photo put you off, they are great 🙂
WEDNESDAY
Crispy Baked Chicken Thighs with Garlic Turmeric Rice from Peas and Crayons. As you know, I am not a huge fan of chicken thighs, but the hubby accidentally bought A LOT of chicken thighs recently, and I am trying new recipes to help me love them 🙂 This sounds like the perfect dish to get me back into chicken thigh love!
THURSDAY
We will be enjoying these Southwestern Sweet Potato Veggie Burgers from goodlifeeats.
FRIDAY
How amazing does this Salmon Bowl with Kale and Lentils from The View From Great Island sound? Perfect for enjoying with a nice glass of wine on Friday night.
Well that's it. I hope you were able to find some inspiration from this weeks meal plan! I for one am super excited 🙂 Let me know if you give anything a go, I would love to hear from you. Happy Eating!

It was so delicious Collette! Added it to my permanent rotation!
Autumn @Mamachallenge says
Those all look great! I think my family would really love having that baked chicken for dinner this week.
Donna1 says
Thanks Autumn, the baked chicken turned out amazing!
Tonya C says
These sound like great recipes, I am going to have to try some soon, when I have time to make a meal plan lol
Christina says
These all sound excellent! I never knew clean eating could look so tasty (and not at all boring!)
Donna1 says
Exactly! I think it sounds harder than what it is 🙂
Amanda Love says
Those recipes sounds really good. I don't do a meal plan. I used to but sometimes it just doesn't happen so I just wing it. 🙂
Donna1 says
Some weeks I am the same, although dinner time definitely goes a lot smoother for me if I know what I am making in advance 🙂
Tina @ My Highest Self says
These meals all look so delicious. I would like to try that garlic chicken dish.
Donna1 says
Thanks Tina, it turned out so good!
Collette says
Love all these weekly meal ideas! I am very interested in trying that garlic tumeric rice out!
Donna1 says
You should give it a go Collette, we just had it, and it turned out so nice!
Carol Bryant says
I love to have meals planned out. This makes things more enjoyable instead of the last minute rush to plan a meal.
Donna1 says
Definitely agree Carol, I can wing it if I have to, but things are definitely a lot less stressful around here if I know what I am making, and have shopped accordingly!
carissa garabedian says
The mushroom and avocado taco looks great! I love the variety of flavors you are using. Thanks
Donna1 says
Thanks Carissa 🙂 Those tacos have been a favourite in our house for a long time now!
Helene Cohen Bludman says
Those all sound so good. I love cooking healthy -- I feel so much better!
Donna1 says
Me too Helene! I find that if I plan it out, I definitely tend to stick to it and not crave the naughtier foods 🙂
Ashley @irishred02 says
Great recipe ideas. I like the avocado taco one- yum!
Donna1 says
It has been one of our favourites for a long time - so yummy! I literally made them last night 🙂
Maggie says
I am really eyeing the Salmon bowl! My kids adore salmon and will actually eat more of that during the meal then the sides! I think we will definitely be trying that one! Thanks for sharing the meal plan!
Donna1 says
Oh my kids are totally the same Maggie! I have to make way more salmon than anything else, as they love it 🙂
Cathy says
What a great and healthy list. I'm trying to get better at meal planning, but I'm still definitely a work in progress. You've reminded that it's been way too long since I've eaten salmon, so I may have to add that very soon.
Donna1 says
I do that all the time Cathy, I love salmon, but I can go for so long totally forgetting about it, and then all of a sudden I am eating it a couple of times in a week 🙂
Gloria @ Homemade & Yummy says
Those sound like great ideas for the week. Sometimes people just need to have it planned out for them.
Donna1 says
Definitely (me included 🙂 )
Emily, Our house now a home says
These all sound and look amazing! I feel like we are in a dinner funk and just having the same things. Thanks for new ideas!
Donna1 says
I get into that funk sometimes as well Emily, which is one of the reasons I started meal planning in the first place. I still tend to through one 'old faithful' recipe in every week, just to keep it easy though
Rebecca Bryant says
YUM!! My family would love the Shrimp dish they enjoy their seafood. I will have to try a few of these recipes.
Donna1 says
My husband and kids are huge seafood fans too! I love it, but I have to remind myself to include it once a week, otherwise I would just stick to chicken and vegetarian dishes
Athena says
My favorite meal on this list would definitely be the chicken. That looks completely delicious.
Donna1 says
It's really good Athena! Glad I stumbled on it!
Bri says
Eating clean does not have to be bland and flavorless. These are some great ideas I can incorporate into my weekly meal plan to help me start eating healthier.
Donna1 says
Thanks Bri, I definitely agree!
Robin Masshole mommy says
It sure sounds like you have some tasty meals planned! Everything sounds so good!
Donna1 says
Thanks Robin 🙂 It has been a delicious week so far 🙂
Jenn @ Peas and Crayons says
I used to cringe at the idea of making chicken thighs vs boneless skinless breasts - seriously! Now they're my favorite (second only to a whole roasted chicken) - hope you fall in love!
Donna1 says
I am sure I will, the recipe sounds delicious! I think my hang up stems back to dodgy take out food when I was in University 🙂
