Wow, with the way the weather has been going around here, I think this may be one of the last winter weeknight meal plan I share with you guys. Spring is definitely coming, and along with it comes my craving for light and fresh salads!

Our little veggie patch is going great guns, so I foresee some 'garden to kitchen' inspired meal plans coming in the future months. I for one am excited. FYI there will be a lot of green beans!
So, here is my meal plan for the week. I hope you can get some inspiration from it and get some delicious home-cooking happening in your house.
MONDAY
As I may have mentioned last week, my cheapie slow cooker died, and I splurged on an Instant Pot. I am totally hooked! I will be trying out this Hearty Broccoli Soup in an Instant (Pot) from Cheftographer for our Meatless Monday.
TUESDAY
We are going to forego the tacos this Tuesday, and opt for Pork and Vegetable San Choy Bow (lettuce wraps) instead. This is a favourite in our house, and I always make a double batch and have some in lettuce wraps the first night, and then some with carrot and zucchini noodles the next night (guess what's for dinner on Wednesday).
WEDNESDAY
I have no photos for tonight, as like I said above, we will be having leftover Pork and Vegetable San Choy Bow minus the lettuce cups, and served with raw carrot and zucchini noodles instead. I use this spiralizer for the noodles.
THURSDAY
We will be enjoying this veggie dish from Cooktoria on Thursday. Potatoes with Mushrooms cooked to perfection in creamy coconut milk - sounds delish!
FRIDAY
And finally its burgers for Friday. We are trying (and actually sticking to it surprisingly well) not to eat out as much, it's always especially hard on a Friday night, so I like to make an effort with something we would normally enjoy at a nice restaurant. This Nori Crust Salmon Burger from Two Purple Figs definitely fits the bill 🙂
