Low Carb Chicken Crust Pizza

When you want the taste and pizza experience, but you can't do the carbs anymore without regretting it the next day, this Chicken Pizza Crust is for you. No more work than a traditional homemade pizza crust, and no extra time needed to let the dough rise, this is a low carb, high protein option for those that love pizza, but don't love a flour based pizza base. Perfect for those eating a gluten-free diet also.

Chicken Pizza Crust

  • 2 lbs (1 kilo) ground chicken
  • 1 cup parmesan cheese
  • β…“ cup egg whites
  • 1 tablespoon Italian seasoning

Pizza Toppings

  • 1 cup pizza sauce
  • 2 cups mozzarella cheese shredded
  • 1 cup bocconcini or mozzarella pearls
  • 1 cup pepperoni (optional)
  • 1 cup cooked and chopped Italian sausage (optional)

  • non-stick cooking spray

Instructions

  • Preheat fan-forced oven to 425F (220C).
  • In a large bowl combine the ground chicken, grated parmesan cheese, egg whites and Italian seasoning. Mix well to combine.
  • Place one of the sheets of parchment paper on a flat surface and lightly spray with non-stick cooking spray, or use a pastry brush to brush with olive oil. Scoop β…“ of the chicken mixture onto the parchment paper.
  • Spray the second sheet of parchment paper with non-stick cooking spray and place on top of the chicken mixture. Use a rolling pin to spread the mixture thinly between the two sheets of parchment paper.
  • Spray a pizza stone or pan with non-stick cooking spray, or brush with olive oil.
  • Peel the top sheet of parchment paper from the chicken. Carefully flip the pizza onto the baking pan and peel the second piece of paper away. Using the same parchment paper, repeat this process to make two more chicken pizza bases.
  • Put the chicken bases into the oven and bake for 25-30 mins. The bases should be fully cooked before removing from the oven.
  • Remove the pizza bases from the oven and scoop about ΒΌ cup of pizza sauce onto each cooked pizza base followed by shredded mozzarella, pepperoni, Italian sausage and mozzarella pearls.
  • Place the pizzas back into the oven for about 5-10 minutes, until the cheese has melted. If you like the cheese to be extra golden brown then pop under the broiler for a couple of minutes before removing from the oven.
  • Serve immediately.

Notes

Tips
The key is to roll the chicken mixture as thin as possible so that it cooks fully and becomes almost crisp, which makes it more like a pizza base.
If the mixture sticks to the parchment paper, use a spatula to gently ease it off, before peeling the parchment paper away.
