Sparkling Lemonade with Raspberry and Ginger
Refreshingly tart and sweet, this homemade lemonade with raspberry and ginger is just bursting with the fruity goodness of fresh raspberries and lemons. The ideal thirst-quencher, it is perfect for hot summer days, picnics, potlucks, or just when you need a cheerful drink to brighten your mood. With a touch of ginger and mint, it's a flavorful twist on the classic lemonade.

Raspberry Lemonade Syrup
- 4 large lemons
- 2 cups fresh raspberries
- 2 cups filtered water
- 5-7 thin slices of ginger
- 1 cup of sugar or sugar alternative
- few sprigs of fresh mint leaves only
Lemon Raspberry Lemonade per 1 glass
- ½ cup soda water or fresh water
- 3 tablespoons lemon raspberry syrup
- 2 slices fresh lemon
- mint for garnish (optional)
- raspberry for garnish (optional)
Raspberry Lemonade Concentrate
Using a small grater zest two lemons, then squeeze the juice from the lemons into a small bowl and set aside (see notes).

Use a small teaspoon to peel the outer layer of the ginger. Cut 5-7 thin slices of ginger.

Put the lemon juice, lemon zest, slices of ginger, sugar, raspberry and mint leaves into a small saucepan.
2 cups fresh raspberries, 1 cup of sugar, few sprigs of fresh mint
Add the water and bring to a gentle boil on the stovetop.

Once the mixture reaches a boil, reduce the heat until just simmering, and allow to simmer for about 25 minutes.
Remove from the heat and leave to cool for about 7-10 minutes.
Strain the raspberry syrup through a fine strainer into a jar or convenient.
Juice the remaining two lemons, and add the juice to the cooled raspberry mixture. Mix well and pop into the fridge to cool.
Lemon Raspberry Lemonade
In a tall glass add 3 tablespoons of the lemon raspberry syrup along with 2 slices of lemon and the ice.

Stir gently to combine and then add the soda water to fill the glass.
½ cup soda water or fresh water
Top with fresh raspberries (optional) and serve.

Lemons
I used very ripe lemons for this recipe, which yields a fair amount of lemon juice.
If your lemons are particularly ripe, and you aren't getting enough juice out, you may want to consider using an extra lemon or two.
Raspberries
Fresh or frozen can be used to make the raspberry syrup.
Store
The raspberry syrup can be stored in an airtight container in the fridge for up to a week.
Simply add to ice and top up with sparkling water when you want to serve.
