  • 1 tbsp extra virgin olive oil
  • 4 chicken sausages
  • 2 stalks celery diced
  • 1 carrot diced
  • 1 small onion diced
  • 1 450 g can diced tomatoes look for no salt added
  • 1 450 g can white beans do not drain (look for no salt added)
  • 2 cups vegetable stock for homemade stock look here
  • 2.5 cups water
  • 2 tbsp parsley chopped
  • 1 cup cheddar cheese shredded
  1. Heat the oil in a large Dutch oven over medium-high heat. Add the sausages and heat until cooked through. Remove from the heat and chop into slices

  2. Add the celery, carrot and onion to the pot and cook, stirring occasionally, until slightly softened, about 5 mins. Add the tomatoes, white beans and their liquid, vegetable stock and water. Bring to a boil and then reduce heat to medium
  3. Continue cooking until the soup thickens slightly, about 20 minutes
  4. Add in the chopped sausages and parsley to the pot and season with salt and pepper to taste
  5. Top each serving with a generous sprinkling of cheese
