Ingredients

  • cup coconut flour
  • ¼ cup coconut oil melted
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 whole eggs
  • ¼ cup dark chocolate chips
  • ¼ cup Goji berries
  • 2 tablespoon shredded unsweetened coconut

Instructions

  • Preheat oven to 350F (175C) and line a baking sheet with parchment paper or silpat
  • Whisk together the coconut flour, coconut oil, maple syrup, vanilla, salt and eggs. It may seem runny to start with but the batter will thicken as the coconut flour absorbs the moisture from the other ingredients
  • Fold in the chocolate chips and goji berries
  • Using a tablespoon at a time, take some batter and roll it into a ball. Pu the ball onto the baking sheet and press lightly with a fork. Sprinkle on some of the shredded coconut.
  • Bake for 12-14 minutes, until golden at the edges
  • Remove from the oven and allow to cool on the pan for 10 minutes and then transfer to a wire rack to cool completely before serving.

Notes

Try and let the cookies cool down before eating as they will be a bit crumbly coming straight from the oven.
If the mixture is too sticky to roll then let it sit for a minute or two for the coconut flour to absorb the moisture from the other ingredients.
You may want to wet your hands to make rolling the balls of batter easier.
Store in an airtight container.
