Apple, carrot and ginger mini muffins are a great way to sneak some veggies into your afternoon snack. The kiddies lap them up too!

Ingredients
  • 1 cup white whole wheat flour
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 4 tbsp unsalted butter melted and cooled
  • 1/2 cup pure maple syrup
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 cup finely grated carrot
  • 1/2 cup apple sauce
  • 1/2 cup raisins optional
Instructions
  1. Preheat oven to 350F

  2. Grease mini muffin tin (I use coconut oil)

  3. Combine the flour, cinnamon, ground ginger, salt, and baking soda in a mixing bowl and whisk until thoroughly combined
  4. In a second bowl, combine the butter, maple syrup, egg, and vanilla extract
  5. Add the wet ingredients to the dry and stir until just combined
  6. Add the carrots, applesauce and raisins and stir until just combined
  7. Fill each cup in the pan to about 3/4 full and bake for about 15 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
Recipe Notes

You can sub in grated apple for the applesauce if that is what you have on hand
