Date, Banana and Oat Flour Waffles In The Blender

Mornings are busy, but we still need to get a healthy and nutritious breakfast on the table, and sometimes you just want waffles. These oat flour waffles are super quick and easy, and because they are made by adding all the ingredients to the blender, they take no time at all. Make it even easier by making a big batch of healthy oatmeal waffles on the weekend and keeping them in the fridge or freezer for a great grab-n-go option.

  • Add the oats to the blender and blitz until they resemble a fine flour.
  • Place the rest of the ingredients into the blender with the oats and blend until smooth.
  • Heat a waffle maker that has been sprayed with a nonstick cooking spray or greased with coconut oil over medium heat.
  • Pour enough batter to fill the waffle maker (this will vary depending on the make and model of waffle maker so be sure to check the instructions to avoid over-filling); cook for 2-3 minutes and until bubbles are popping over the top of the pancakes. Flip and cook for about 1-2 minutes more. Continue with remaining batter.
  • Cook for 2-3 minutes, flip and cook for about 2-3 minutes more. Continue with remaining batter. (see notes)
  • Serve with favorite toppings and enjoy!

Notes

This recipe makes 3 large waffles which is 12 small waffle triangles.
You may need to scrape down the sides of the blender once or twice to get all the ingredients combined (I purchased one of these for my vitamix to get any clumps from under the blades and it is super handy)
If your batter doesn't look runny enough (it should be easily pourable), then just add some more milk 1 tablespoon at a time
As there is no wheat flour in these waffles, you will want to cook them for a little longer than you would cook a regular batch, otherwise they may remain gooey in the middle. They will be ready when they are easy to remove from the waffle maker.
