Plum and Granola Yogurt Parfait Cups
These simple yet elegant plum and yogurt parfait cups make a fantastic make-ahead breakfast for a special occasion. Simply layer yogurt, nice granola, sliced plums, and good quality honey, and you have a gorgeous breakfast to serve with minimal effort.
Servings: 4 serves
- 4 plums
- 2 cups Granola of choice
- 2 cups Greek Yogurt
- ½ cup apple jam
- 1 tbsp honey
Wash and pit the plums and chop coarsely
In 4 small jars evenly layer roughly 2-3 tbsp granola, 2-3 tbsp yogurt, half of the plums, 2-3 tbsp granola, 1 tbsp apple jam, 2-3 tbsp yogurt, 2-3 tbsp granola, the rest of the plums
Drizzle with the honey and serve
Fruit parfaits should be stored in the fridge until ready to serve.
Although they can be made ahead of time, the granola in the middle layers may become soggy, so I would recommend only preparing an hour or two before you plan on serving.
These do NOT freeze well, do not freeze them.
Plums can be subbed out for whatever seasonal fruit you have on hand.
Swap Greek yogurt for coconut yogurt to make it vegan.
Swap honey for maple syrup to make it vegan.
