- 1 ½ cups raw hazelnuts
- ¾ cup dark chocolate chips
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- maple syrup (optional extra if you prefer it sweeter)
Preheat the oven to 350F (175C) and line a baking sheet with parchment paper or a silicone sheet. Spread the hazelnuts over the baking sheet.
Add the hazelnuts to the preheated oven and roast for 12 minutes, or until they are turning golden and the skins are starting to crack.
Remove the roasted hazelnuts from the oven and allow them to cool for 5 minutes. When cool enough to handle, rub the skins off the hazelnuts as much as possible using a paper towel or a tea towel.
Place the hazelnuts into a high-speed blender or a food processor. Blend until a smooth butter is formed. You may need to stop and scrape down the edges with a spatula to make sure all of the hazelnuts are incorporated.
While the hazelnuts are blending, melt the chocolate chips. You can do this using a double boiler or blasting in the microwave for 30 seconds at a time until melted and smooth. Allow to cool slightly.
Add the melted chocolate to the hazelnut butter along with the vanilla and salt. Blend for another few minutes until the mixture is completely smooth.
Transfer the mixture to an airtight jar and store it at room temperature for about 2 weeks.
Want It Sweeter?
If you prefer a sweeter nutella, you can always add about 1 tablespoon of maple syrup to the mixture when you add the melted chocolate.
Storage
Store in an airtight container at room temperature for about 2 weeks.
