Speedy Korean Style Spicy Pork Mince

This speedy Korean-style spicy pork mince (ground pork) is a great little easy midweek recipe that can be used in so many different ways. Load up some bowls with rice (or cauliflower rice), some chopped veggies, and a nice drizzle of gochujang or add to lettuce leaves for something a bit lighter. Easily meal prepped and enjoyed for lunch and dinner throughout the week.

Ingredients

  • 1 tablespoon sesame oil
  • 1 lb (roughly 500 grams) ground pork
  • ¼ cup low sodium soy sauce or tamari see notes
  • ¼ cup coconut sugar or brown sugar
  • 2 tablespoons gochujang or sriracha (use more or less depending on level of spiciness preferred)
  • 4 cloves garlic finely minced
  • 2 tablespoons fresh ginger minced
  • 1 tablespoon mirin
  • ½ tablespoon onion powder see notes
  • salt and pepper to taste
  • thinly sliced green onions and sesame seeds to serve

Instructions

  • Heat the sesame oil in a large saucepan or wok over medium heat.
  • Once hot, add the ground pork. Use a whisk or a wooden spoon to gently mash the ground pork while it cooks. Cook until browned, about 5 minutes.
  • In a medium bowl add the rest of the ingredients and stir well until the coconut sugar has dissolved and the mixture is well combined.
  • Add the sauce to the cooked ground pork and allow to simmer for about 5 minutes, until heated through and the sauce has reduced slightly.
  • Remove from the heat and serve immediately.

Notes

Soy Sauce
Not all soy sauces are created equally and some can be very salty.
Please check how salty your soy sauce is before using, remember you can always add more after serving if it needs it, but you can't save an overly salted pork mix.
Onion Powder
Check to make sure there is no salt added to the onion powder.
Storing and Freezing
Store leftovers in an airtight container in the fridge for 3-4 days.
Store in the freezer for 2-3 months.
