Homemade Mushroom Chive and Chicken Sausages

- 1 lb (400g) ground chicken
- 10 crimini mushrooms
- 2 tablespoons crumbled feta cheese
- 1 tablespoon fresh chives finely chopped
- 2 cloves garlic minced
- salt and pepper to taste
- Avocado oil or cooking oil of choice
Using a food processor or a food mincer attachment, process all the ingredients together until well combined.
1 lb (400g) ground chicken, 10 crimini mushrooms, 2 tablespoons crumbled feta cheese, 1 tablespoon fresh chives, 2 cloves garlic, salt and pepper to taste
Using wet hands (I keep a bowl of water beside me on the bench), shape 1 tablespoon of the mixture at a time into patties and set them onto a plate. Repeat with the rest of the mixture until it is all used up.
Heat avocado oil in a large saucepan on medium heat. Add sausage patties to the pan (I can usually fit about 6) and cook about 4 minutes on each side until cooked through.

Storing
Allow leftover chicken sausage patties to cool completely before storing.
They should be stored in an airtight container in the fridge for up to 3 days.
They can also be frozen for up to 4 months.
