Apple, carrot and ginger mini muffins are a great way to sneak some veggies into your afternoon snack. The kiddies lap them up too!

white whole wheat flour

melted and cooled

pure maple syrup

large egg
beaten

vanilla extract

finely grated carrot

apple sauce

raisins

Instructions
Preheat oven to 350F (180C)
Grease mini muffin tin (I use coconut oil)
Combine the flour, cinnamon, ground ginger, salt, and baking soda in a mixing bowl and whisk until thoroughly combined
1 cup white whole wheat flour,
½ teaspoon ground cinnamon,
¼ teaspoon ground ginger,
¼ teaspoon salt,
1 teaspoon baking soda
In a second bowl, combine the butter, maple syrup, egg, and vanilla extract
4 tablespoons unsalted butter,
½ cup pure maple syrup,
1 large egg,
1 teaspoon vanilla extract
Add the wet ingredients to the dry and stir until just combined
Add the carrots, applesauce and raisins and stir until just combined
1 cup finely grated carrot,
½ cup apple sauce,
½ cup raisins
Fill each cup in the pan to about ¾ full and bake for about 15 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
Notes
You can sub in grated apple for the applesauce if that is what you have on hand
