Apple Carrot Mini Muffins

Apple, carrot and ginger mini muffins are a great way to sneak some veggies into your afternoon snack. The kiddies lap them up too!

  • Preheat oven to 350F (180C)
  • Grease mini muffin tin (I use coconut oil)
  • Combine the flour, cinnamon, ground ginger, salt, and baking soda in a mixing bowl and whisk until thoroughly combined
    1 cup white whole wheat flour, ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ¼ teaspoon salt, 1 teaspoon baking soda
  • In a second bowl, combine the butter, maple syrup, egg, and vanilla extract
    4 tablespoons unsalted butter, ½ cup pure maple syrup, 1 large egg, 1 teaspoon vanilla extract
  • Add the wet ingredients to the dry and stir until just combined
  • Add the carrots, applesauce and raisins and stir until just combined
    1 cup finely grated carrot, ½ cup apple sauce, ½ cup raisins
  • Fill each cup in the pan to about ¾ full and bake for about 15 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

Notes

You can sub in grated apple for the applesauce if that is what you have on hand
