No Churn Vegan Peach Ice Cream
Frozen peaches and coconut cream combine to make the perfect summer treat. Vegan, refined sugar free and positively delightful.

- 2 cups frozen peaches
- ½ cup full fat coconut cream
- 1 teaspoon pure vanilla extract
- 1 tablespoon maple syrup (sub honey if you want)
Remove frozen peaches from the freezer and allow to thaw for 5 mins
Throw all ingredients into a food processor or high powered blender. Blend until an ice cream like consistency is reached (about 3-5 minutes depending on the power of your machine). Scrape down the sides with a spatula as needed
Serve up and enjoy
Add more maple syrup or honey depending on the level of sweetness you require. I found 1 tablespoon to be perfect for me, but this wasn't overly sweet.
This ice cream should last for a few weeks in the freezer if stored in an airtight container.
You made need to let the ice cream rest on the bench for about 5 minutes before scooping.
