Halloween Breakfast Bliss Balls

Have fun and indulge in some better-for-you Halloween breakfast bliss balls. Allergy-friendly and easy to make, they also make a great little healthier Halloween treat to include in little lunch boxes on the day.

Ingredients

  • ½ cup sunflower seeds
  • 3 cups brown rice puffs
  • 1 large ripe banana roughly chopped (about ½ cup)
  • 1 cup fresh Medjool dates (see notes)
  • 1 teaspoon vanilla extract
  • 5 tablespoon desiccated coconut
  • pretzel sticks, dried noodles, raisins, currants, choc chips, sunflower seeds, pepitas, dried peas to decorate

Instructions

  • Place the sunflower seeds in a food processor until finely chopped. Add the brown rice puffs, banana, date, vanilla and 2 tablespoon of the coconut and process until combined.
  • Roll heaped tablespoonfuls of the mixture into balls. Spred the remaining coconut on a plate and roll balls lightly in the coconut to coat.
  • Store in an airtight container in the fridge for up to 3 days or in the freezer for up to 2 months.

Notes

Freeze: to freeze the bliss balls, place in a snap lock bag and expel as much air as possible. Store in the freezer for up to 2 months.
