  • 1/4 cup diced brown onion
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • 2 peaches pits removed and sliced
  • 2/3 cup apple cider vinegar

  • 1 tbsp fresh lemon juice
  • 1 tbsp dijon mustard
  • 1 tsp smoked paprika
  • salt and pepper to taste
Instructions

  2. Reduce the heat to low and add the apple cider vinegar, tomato paste, lemon juice, paprika, mustard, salt and pepper. Give everything a good stir until it is relatively smooth. Simmer for around 5 minutes, until the mixture has thickened.
