Thyme and Honey Fresh Peach Gin Cocktail

Fresh peaches, honey, and thyme are reduced to a beautiful naturally sweetened syrup and then combined with gin, soda, and lime for the most delicious Thyme and Honey Gin Peach Cocktail. A simple, yet delicious cocktail that is perfect for summer entertaining when peaches are at their best.

Ingredients

  • 3 fresh peaches
  • 8 sprigs fresh thyme
  • 2 tablespoon honey
  • ½ cup water
  • 1 cup gin
  • 1 ½ cups soda water
  • 1 lemon juiced

Instructions

  • Dice the peaches and place in a small saucepan with the water, honey, and 4 sprigs of thyme.
  • Over medium heat bring the mixture to a boil and cook until the peaches have softened. Remove from heat and allow to cool completely.
  • Strain the mixture through a sieve, catching the syrup in a bowl or jug. Use the back of a spoon to press gently on the peaches to make sure you get the juice through. Set the peach mixture aside.
  • Place the syrup in the refrigerator to chill for at least 1 hour.
  • In a large jug, add some ice, followed by the gin, soda, lemon juice, and peach syrup. Give everything a good stir until well combined. Serve straight away.

Notes

The peach and honey syrup can be stored in the fridge for up to 1 week before it should be used.
The syrup can also be frozen for up to 6 months.
