Thyme and Honey Fresh Peach Gin Cocktail
Fresh peaches, honey, and thyme are reduced to a beautiful naturally sweetened syrup and then combined with gin, soda, and lime for the most delicious Thyme and Honey Gin Peach Cocktail. A simple, yet delicious cocktail that is perfect for summer entertaining when peaches are at their best.

- 3 fresh peaches
- 8 sprigs fresh thyme
- 2 tablespoon honey
- ½ cup water
- 1 cup gin
- 1 ½ cups soda water
- 1 lemon juiced
Dice the peaches and place in a small saucepan with the water, honey, and 4 sprigs of thyme.
Over medium heat bring the mixture to a boil and cook until the peaches have softened. Remove from heat and allow to cool completely.
Strain the mixture through a sieve, catching the syrup in a bowl or jug. Use the back of a spoon to press gently on the peaches to make sure you get the juice through. Set the peach mixture aside.
Place the syrup in the refrigerator to chill for at least 1 hour.
In a large jug, add some ice, followed by the gin, soda, lemon juice, and peach syrup. Give everything a good stir until well combined. Serve straight away.
The peach and honey syrup can be stored in the fridge for up to 1 week before it should be used.
The syrup can also be frozen for up to 6 months.
