    This Thyme and Honey Gin Peach Cocktail just screams summer. It is highly influenced by my Fresh Peach and Honey Lemonade and is the perfect way to enjoy a cool drink on a warm day. This simple cocktail is easily made non-alcoholic by simply leaving the gin out of the mixture, and adding a little more soda water.

    Thyme and Honey Gin Peach Cocktail

    Ready for a simple yet delicious cocktail that will be the star of your next gathering?

    This Honey Peach Cocktail is so easy to bring together, and showcases the natural sweetness of peaches and honey, with the addition of a slight touch of savory through the thyme.

    A fun and punchy cocktail perfect for serving up at a summer BBQ.

    Don't do alcohol?

    No worries, this cocktail is still just as perfect when served without the gin, simply leave the gin out and replace it with a touch more soda water.

    What Is Needed To Make This Peach Cocktail Recipe

    We don't need any fancy cocktail ingredients or contraptions to make this simple cocktail.

    You will need:

    • fresh peaches: fresh in season peaches are best for this cocktail, making it super seasonal. However in a pinch you could just as easily use some canned peaches, just know this may make for a sweeter cocktail.
    • fresh thyme: fresh thyme is really important here, it has a much more subtle flavor than dried thyme, and also looks really pretty as a simple garnish. if you absolutely cannnot find fresh thyme, then go on ahead and use fried thyme, but use half of the amount.
    • pure honey: use a golden honey rather than a creamed honey here. Also keep in mind that different honeys will have different flavor profiles, some more savory than sweet. This may change the outcome of your cocktail.
    • water: any water is fine, I prefer filtered, but it's up to you.
    • gin: use your favorite gin here. Seeing as we are mixing it with quite a sweet and strong flavored peach honey simple syrup, I wouldn't use anything too expensive or fancy.
    • soda water
    • juice of a lemon: what type of lemon you use will influence the flavor profile of the drink. A sweet meyer lemon will give more of an overall sweetness to the drink, whereas a regular lemon will add a bit more of an edge, and balance out the sweetness from the other ingredients.

    How To Make This Gin Peach Cocktail

    This really is a very easy cocktail to bring together and the hardest element can even be made ahead of time and stored in the fridge until time to serve, making it the perfect cocktail to serve when you are hosting.

    Make your Peach Honey Simple Syrup

    This is the most hands-on part of the recipe.

    It can be made ahead of time and stored in the fridge for up to a week before being used, making it perfect for prepping ahead of time.

    • Simply dice the peaches and place them into a small saucepan with the water, honey, and 4 sprigs of thyme.
    • Over medium heat bring the mixture to a boil and cook until the peaches have softened. Remove from heat and allow to cool completely.
    • Strain the mixture through a sieve, catching the syrup in a bowl or jug. Use the back of a spoon to press gently on the peaches to make sure you get the juice through. Set the peach honey simple syrup aside to cool completely.
    • Place the syrup in the refrigerator to chill for at least 1 hour.

    To Assemble The Cocktail

    Once you have the honey simple syrup, the rest of the cocktail comes together in no time at all.

    Grab a large jug, add some ice, followed by the gin, soda, lemon juice, and peach syrup. Give everything a good stir until well combined. Serve straight away.

    Fresh Peaches vs Canned Peaches

    Fresh peaches when they are in season are nothing short of sensational and should be used in preference to canned peaches every time.

    If however, you cannot get your hands on fresh peaches, if for example, they are not in season or they are not ripe, then go on ahead and sub in some canned peaches.

    The overall cocktail will likely end up being a bit sweeter, as the canned peaches will already have been soaking in, and absorbed, the syrup in which it was stored, so just keep that in mind.

    You may want to adjust the amount of honey added to reflect this change.

    Tips, Tricks, and Substitutions

    You can always sub another white spirit, like vodka for example, instead of Gin.

    This can easily be made non-alcoholic by simply leaving out the gin.

    If you would like to make this peach cocktail ahead to be more prepared for an upcoming party, here are a few pointers:

    • Make the peach honey simple syrup ahead of time, and keep stored in the fridge for up to a week before using;
    • If you have a lot of fresh peaches, you can always make a big batch of the simple syrup and store in individual containers in the fridge for up to a year until needed,
    • Juice the lemon, and keep the juice stored in the fridge until needed. Fresh lemon is best, however in a pinch you can use the store-bought pre-prepared lemon juice (adjust accordingly)
    • Make sure you have lots of ice on hand for serving.
