  • 3 cups old fashioned oats
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup plain yogurt of choice (I used whole milk yogurt)
  • 2/3 cup milk of choice
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut sugar
  • 2 eggs
  • 3/4 cup blueberries, fresh or dried
  1. Preheat oven to 350F. Prepare a 8x8 baking pan with cooking spray (I use fractionated coconut oil).

  2. In a large bowl, mix together the oats, baking powder, salt and  cinnamon .

  3. In another bowl, whisk together yogurt, milk, applesauce, coconut oil, coconut sugar and eggs. Add the wet ingredients to the dry ingredients and mix until just incorporated. Fold in the blueberries.

  4. Pour batter into baking pan and spread evenly in pan.

  5. Cook for about 35 minutes or until golden brown on top. Allow to cool in the pan for at least 30 minutes before cutting into squares and storing in an airtight container in the fridge.
