    Peanut Butter and Dark Chocolate Cheesecake Fat Bombs

    These easy keto fat bombs are super rich and delicious.

    Made with only 4 ingredients they are a great option for a low in sugar afternoon pick me up.

    I am also partial to enjoying one after the kids go to bed and I feel like a wee bit of dessert without the sugar spike.

    The best bit?

    Because they are so rich you will be left feeling satisfied with just one.

    No more eating the entire packet of cookies (*cough cough*).

    Combine the peanut butter cream cheese and granulated swerve. Please note they are easier to combine if they are at room temperature.

    Do I Need To Be On A Ketogenic Diet To Enjoy These?

    Absolutely not.

    Once again: you absolutely do not need to be on a low carb or ketogenic diet to enjoy these.

    I certainly am not.

    But I do have a terrible tooth for craving sweets at night after the kids are in bed, and these days I try to stay away from carb and sugar-heavy treats before turning in for the night.

    I also have a problem with self-control and have been known to eat an entire packet of cookies if they enter the house (I don't buy them for that reason!).

    These chocolate fat bombs help to keep that in check as one is definitely enough to satisfy.

    It should come together as a fairly thick batter. Be sure to mix the peanut butter properly before adding to make sure you don't get all of the excess oil from the top.

    Tell Me The Good Stuff

    Fat Bombs when made correctly have an excellent amount of fat, protein and carbohydrate ratio.

    They are also:

    • Low Carb
    • No-Bake
    • Soy Free
    • Gluten-Free
    • Refined Sugar-Free
    • Freezer Friendly
    • Egg Free

    Pulse the dark chocolate until it comes together into small pieces. You want it slightly chunky for rolling the peanut butter balls in.

    They store well in the freezer, so can be made ahead of time for snack prepping perfection.

    They are just perfect for making substitutions with what you have on hand:

    • No peanut butter - sub for any other nut butter
    • Can't have nuts - sub for a sunbutter or a tahini
    • Can't have dairy - sub the cream cheese for some coconut oil (please note if you do this they will need to be kept in the fridge/freezer and won't travel as well as the coconut oil will melt)
    • Feel free to make additions as you see fit: I love rolling mine in some crushed nuts for a bit of crunch, add in some protein powder as you see fit

    There are no hard and fast rules when it comes to chocolate fat bombs so make it your own and have some fun.

    How Do We Store Chocolate Cheesecake Fat Bombs Properly?

    Once you have made up a batch of these delicious little fat bombs go ahead and keep them stored in the fridge for around 1-2 weeks.

    At which point if you haven't finished them then just pop them in the freezer until needed.

    You will have to let them come to room temp for a couple of minutes if they have been frozen, otherwise, they might be a bit hard to eat.

    Equipment

    • Food processor

    Ingredients
      

    • 1 cup dark chocolate broken into squares (check ingredients: see notes)
    • ½ cup cream cheese
    • ½ cup creamy peanut butter (check ingredients to make sure no added sugar)
    • 2 tablespoon granulated swerve (or other granulated sweetener of choice)
    Prevent your screen from going dark

    Instructions
     

    • Combine all of the ingredients, except the chocolate, into a bowl and mix thoroughly
    • Place all of the chocolate squares into a food processor and pulse until they are in small pieces, but not too fine
    • Roll the peanut butter mixture into rough 1 inch balls (about 2cm) and then roll in the chocolate pieces
    • Place finished chocolate balls onto some wax paper (I use reusable beeswax wraps to prevent waste) on a plate, pan or flat surface to place in the freezer
    • Once frozen, store in the fridge or freezer in an airtight container. Should last in the fridge for 1-2 weeks or in the freezer for a couple of months

    Notes

    The peanut butter and cream cheese are easier to mix if they’re at room temperature.
    Be sure the chocolate you use is keto-friendly as not all dark chocolate is. You’ll want at least 60% dark chocolate as this is better for you in general.
    Go for an all natural peanut butter or you can even use almond butter which is even better.

        They are so good Christie! I have a couple of keto recipes, although I don't follow a keto diet myself so I don't tend to label a lot of them as keto so as not to try and come across as someone who knows a lot about it (because I don't!)       We love these! They are a perfect mid-day treat - we keep them in the freezer, then my bf grabs one on his way out to work and it's thawed by the time he's desperate for an after lunch snack at the office! Thank you!
