    This cheesecake fat bomb has the ultimate combination of lemon and coconut in a cheesecake form.

    Making it creamy, zesty and smooth all at once.

    This combines to give you an indulgent yet guilt-free snack just waiting to be shared with someone you love, or all by yourself.

    What Ingredients Are Needed To Make A Cheesecake Fat Bomb

    Don’t worry, there’s nothing fancy, except maybe the granulated swerve if you don’t tend to have that on hand.

    But you can easily grab some from the supermarket or get it delivered from Amazon here or any other online specializing in health foods.

    You are going to need:

    • cream cheese
    • fresh lemon juice
    • unsweetened shredded coconut
    • coconut oil
    • granulated swerve
    • vanilla

    That’s it.

    And it's so easy to put them together:

    (1) Add all ingredients to a large bowl.

    (2) Use a spatula to mix until well combined.

    (3) Press into a silicone mold until the mixture reaches to top and freeze until set.

    How easy is that!

    If you are looking for a mold you can find some super cute inexpensive versions on Amazon like these:

    They also have some at IKEA, and at home goods stores.

    Look around and you are bound to find something you like.

    Alternatively, you can use an ice cube tray, or if you don't mind getting a little bit messy then roll the fat bombs into balls and then roll in some coconut before popping into the freezer.

    How To Store Lemon Cheesecake Fat Bomb

    I like to keep mine stored in the freezer and take them out about 20 minutes before I want to eat them. This makes the fat bomb soften up just enough to make them a creamy yet firm treat.

    They are also fine if kept in the fridge in an airtight container, although they will be a bit on the softer side.

    If you want to pack them for lunch or a picnic then I suggest you pack them in a cooler bag with some ice packs to make sure they don't melt too much.

    Ingredients
      

    • 8 ounces cream cheese
    • 1 cup shredded unsweetened coconut
    • 2 tablespoon granulated swerve
    • 2 tablespoon fresh lemon juice
    • 1 tablespoon coconut oil
    • 2 teaspoon vanilla extract
    Prevent your screen from going dark

    Instructions
     

    • Combine all ingredients in a large bowl and mix until just combined.
    • In a silicone mold, spoon the mixture into the cavities and press down until full to the brim.
    • Place in the freezer for at least 2 hours or until the fat bombs have solidified.

    Notes

    If you don’t want to use a silicone mold, you can get your fingers a little messy and roll the mixture into balls, roll them in some extra coconut, then place the balls on a wax covered baking sheet and freeze them for the same amount of time.

      Omg, I need this cheesecake fat bomb in my life! It's not possible to finish reading the recipe and not go straight to the kitchen. I believe all the ingredients really work together. To be honest, I have no self-control when it comes to coconut and lemon. I'm so excited at the idea of giving the recipe a try (hope really soon).
