These donuts are super easy to make and are always a big hit.
Naturally sweetened with maple syrup and ripe banana, they aren't overly sweet, especially with that little hit of turmeric and black pepper in the background.
They make a great breakfast, snack, or lunchbox addition.

How To Make Baked Banana Donuts
These are super easy to whip up.
To make your banana bread donuts you are going to need:
- oats (if you are gluten-free then be sure to get gluten-free oats)
- a ripe banana (the more ripe, the more sweet the outcome)
- maple syrup
- oat milk
- vanilla
- baking powder
- turmeric
- black pepper
I like to top mine with some flakes of unsweetened coconut flakes for simplicity, but if you want to fancy things up a bit then you can always whip up some Banana and Coconut Butter Frosting.
If you don't have a donut tin you can always use a muffin tin, although the recipe time might need to be adjusted.

Do I Have To Add The Black Pepper?
Yes.
Adding black pepper activates the turmeric.
You can certainly make the donuts without adding the black pepper, you will still get that distinct color and flavor from the turmeric, however, you won't get the potential associated health benefits.
You won't taste the black pepper, I promise (if my 3 year old can't taste it you can be sure you won't either, it's just a pinch!).

Make Sure You Grease The Tin.
Please make sure you grease the donut tin.
These donuts are very light and fluffy and will easily get stuck in the tin if it is not greased properly.
I use fractionated coconut oil to grease mine, but you can also use butter, olive oil or avocado oil depending on what you have on hand.

Baked Turmeric and Oatmeal Banana Donuts

Ingredients
- ¾ cup oats
- 2 tablespoon unsweetened shredded coconut plus extra for serving
- 1 ½ teaspoon baking powder
- ¼ teaspoon ground turmeric
- ¼ teaspoon sea salt
- â…“ cup pure maple syrup
- half of a super ripe banana - mashed
- â…“ cup oat milk or other milk of your choosing
- 1 teaspoon pure vanilla extract
- pinch of black pepper
Instructions
- Preheat oven to 300F (150C) and lightly grease a doughnut/donut tray (I use fractionated coconut oil)
- Put the oats, coconut, baking powder, turmeric and salt into a food processeor and blitz until it resembles fine flour. Add to a large bowl¾ cup oats, 2 tablespoon unsweetened shredded coconut, 1 ½ teaspoon baking powder, ¼ teaspoon ground turmeric, ¼ teaspoon sea salt
- Add in the maple syrup, mashed banana, oat milk, vanilla and black pepper. Stir well to combineâ…“ cup pure maple syrup, half of a super ripe banana - mashed, â…“ cup oat milk, 1 teaspoon pure vanilla extract, pinch of black pepper
- Spoon the batter into the donut tray (there will be enough for 6 donuts)
- Bake for 24 minutes, they should be firm to the touch
- Allow to cool in the tray for 10 minutes, before removing and popping onto a cooling rack
