    Easy Almond Milk Rice Pudding

    Forget the canned rice pudding you enjoyed as a child, this easy almond milk stovetop rice pudding is the perfect easy to prepare sweet snack that can be eaten as is or dressed up to make it that little bit fancy. Only a handful of ingredients are required and you are good to go.

    How Easy Is It To Make Rice Pudding

    Super easy.

    We are basically going to add all of the ingredients to a pot and cook it on the stovetop until the sauce has thickened up and the rice is fully cooked.

    You are going to need:

    • almond milk
    • water
    • white rice
    • orange zest
    • maple syrup
    • vanilla
    • ground cinnamon
    • salt

    A Note On Ingredients

    Almond Milk

    I make my rice pudding with almond milk as I love the flavor when combined with rice, and making it this way makes it an accidentally vegan rice pudding.

    However, you can always use any other milk of choice depending on your preference and taste.

    White Rice

    White rice cooks a lot quicker than other types of rice, and makes for a great consistency that you would normally find in an old fashioned rice pudding recipe.

    However, you can absolutely sub out for some brown rice, just increase the cooking time in accordance with the instructions on the packaging.

    Using brown rice in this recipe will give you a more toothsome texture, but one that is still enjoyable.

    Maple Syrup

    Look for pure maple syrup which only has an ingredient list of maple syrup, no other sugars or additives should be in there.

    If you are not vegan, you can always sub out the maple syrup for some honey or other sweetener of choice.

    Tips, Tricks and Substitutions For The Best Almond Milk Rice Pudding

    Be sure to continually stir the rice and creamy sauce mixture so that the rice and milk do not stick to the saucepan.

    Once the sauce has come to an initial boil, reduce the heat to a medium-low to prevent the milk from burning.

    Store in an airtight container in the fridge for up to 3 days.

    Almond milk rice pudding can be served warm or cold, however, if you are serving cold you may need to add a little more milk of choice to loosen it up before serving.

    To warm up simply pop the rice pudding into a microwaveable dish and heat for about 1 minute.

    Alternatively, you can always re-heat on the stovetop if you prefer to not use a microwave.

    Want To Fancy Things Up A Bit?

    The best bit about homemade rice pudding is that it is super versatile.

    You can serve as is, or you can go to town and change things up to make this a little bit more fancy.

    Maybe try these variations:

    • Subbing out the almond milk for some coconut milk and add a kaffir lime while cooking to give it a bit of an Asian inspired flavour
    • Top with fruits of choice: passionfruit, pineapple, strawberries, or whatever other fruit you have on hand all work well
    • Add a vanilla bean to the mixture while it is cooking for a more intense vanilla infusion
    • Add a cinnamon stick to the mixture while it is cooking for a more intense cinnamon flavor (be sure to remove before serving)
    • Add some orange segments or a drop of food-grade orange oil to the mixture once cooked to amp up the citrus notes.

    Want To Make Your Own Almond Milk

    These days almond milk can easily be found premade in the store.

    They are not all created equally so be sure to check the ingredients to be sure you are happy with what is in there (amount of sugar etc).

    Alternatively, you can always make your own!

    Almond Milk Stovetop Rice Pudding

    Ingredients
      

    • 3 cups almond milk (or milk of choice)
    • 1 cup water
    • 1 cup white rice
    • zest of one orange
    • ¼ cup pure maple syrup
    • 1 teaspoon pure vanilla extract
    • 1 teaspoon ground cinnamon (plus more for serving)
    • ½ teaspoon salt

    Instructions
     

    • Place all of the ingredients into a medium-sized saucepan and stir well to combine.
    • Over high heat on the stove, bring the mixture to a boil, stirring continuously to prevent the ingredients from sticking to the pan and burning.
    • Reduce the heat to a simmer and continue stirring the mixture until the sauce has become thick and creamy and the rice has cooked. This should take about 15 minutes.
    • Once the rice has cooked and the mixture has a similar appearance and texture as oatmeal it is ready. Remove from the heat and serve warm with a sprinkle of cinnamon on top.

    Notes

    Milk: sub in any other milk of choice.
    Maple syrup: look for pure maple syrup, not maple flavoured syrup.
