Mini Lemon Tarts with Fresh Raspberries
These mini lemon tarts make the perfect last-minute dessert for a crowd, especially a crowd that will be walking around and socialising whilst eating.
They also make a great option if you will be spending all of your time cooking a meal and just want a dessert that is super simple to throw together, but still looks impressive and tastes delicious.
They can be made a couple of hours ahead of time and simply stored in the fridge in an airtight container until needed.
How Easy Are These Individual Lemon Tarts?
So easy.
Well, they will be as easy or as hard as you would like to make them.
This will depend on whether you want to make your own pie crusts and/or lemon curd, or opt for store-bought.
For the base there are lots of options.
You can:
- make your own using a recipe like this one from A Baking Journey;
- make your own using puff pastry in a mini muffin tray (you will need to cover the first mini muffin tray with another mini muffin tray to stop them from rising too much);
- make your own using pre-cut and par-baked puff pastry;
- make your own using pieces of bread with the crust removed, rolled flat, and baked in a mini muffin tray;
- buy pre-made tart shells from the grocery store or a specialized food store (this option does not have to be baked, so makes this way the most simple).
Same story with the lemon curd.
You can buy it premade lemon curd in a jar in the grocery store, it is usually where you would find the jams and marmalades.

Once you have decided what ingredients you are going to use, it is simply a matter of adding a spoonful of lemon curd to the tart shell, followed by a fresh raspberry.
If you want to make it extra fancy you can sprinkle on some edible flowers or icing sugar.

Are These Lemon Tarts Gluten-Free?
This will depend on what you use as the base.
It may be hard to find a pre-made base that is gluten-free, but you can easily improvise with something like these coconut chocolate bites.
Simply leave out the cocoa powder, and press a bigger indent into the coconut mixture before baking.
