    Kale and Coconut Pomegranate Smoothie

    Kale pomegranate and coconut smoothie

    You need one of these pomegranate, kale, and coconut pomegranate smoothie in your life asap! All the great ingredients jammed in there will help keep you healthy and sniffle-free. Plus it tastes so delicious the little ones will drink it up without a word.

    Serve in a tall glass or mason jar to keep the smoothie extra cold.

    I am the first to admit that I was very late to the green smoothie bandwagon.

    Don’t get me wrong, I tried early on in my clean eating days, but somehow my smoothies always ended up a terrible-looking brown color, and I just couldn’t get around that.

    I could not for the life of me, drink the brown and enjoy it....so I gave up for a while.

    I persevered though, and here we are.

    For this easy smoothie you are going to need:

    • unsweetened coconut flakes
    • crushed pecans
    • frozen banana
    • dates
    • kale
    • pomegranate arils
    • coconut water

    That's it.

    Tips Tricks and Substitutions

    I have become a bit of a smoothie buff over the years and would love to pass on my newfound knowledge to help you get the best out of your smoothie-making adventures.

    • Freeze your fruit: keep regularly used fruit in the freezer and add this to the smoothie instead of ice cubes. I always have pomegranate arils, pineapple and bananas in the freezer;
    • Buy spinach in bulk: make a puree in a high-speed blender (I usually add a little bit of water), freeze in silicone muffin moulds and then transfer from the moulds to a freezer bag. You end up with perfectly portioned ¼ cup spinach blocks;
    • Blend out the bits: kids are harder to convince with a green smoothie if it has bits. I use a high-speed blender to make sure it is completely smooth. I have been using a Vitamix for years and have definitely gotten my monies worth. A good green smoothie should be absolutely, perfectly smooth, with a bit of heft from higher-fat ingredients (think nut butters, avocado, Greek yogurt, coconut oil). Blend the greens with the coconut water first to get it completely smooth before adding in the fruit and other ingredients;
    • Easy substitute for nut milk: If you have a high-speed blender, a great substitute for nut milk is ¼ cup of raw nuts and 1 to 2 cups of water. If you have a regular blender, a tablespoon of nut butter per cup of water works as well.

    This pomegranate smoothie is so good that even though my kids watched me put in a handful of green stuff into the blender they still drank the whole thing up and asked for more.

    The color itself is AH-mazing.

    Vibrant green - oh so pretty.

    If you aren’t a fan of green, I can guarantee that this kale and pomegranate smoothie will help to convert you.

    If not, you are beyond saving 🙂

    Ingredients
      

    • 2 tablespoon unsweetened coconut flakes
    • 2 tablespoon crushed pecans
    • 1 Frozen Banana
    • 5 Dates
    • 1 Handful of Kale
    • ¼ cup pomegranate arils
    • ½ cup coconut water

    Instructions
     

    • Pop everything into the blender, except for the coconut water. Start blending
    • Slowly add the coconut water until you get a smooth consistency. Enjoy

      Yeah, if it's not in season where you are it can be hard to find - there's usually some lurking around in the frozen section of healthy food stores though!

        Hmmmm It kind of needs the banana for creaminess and flavour, but you can't taste the banana if that's what you are afraid of? I have had reasonable success using frozen figs, but it becomes a LOT sweeter, so I would cut down on the amount of dates!

        If you like spinach, you could totally sub that! However, my kids (1yo and 2yo), are the biggest anti-kale people out there, and they were licking their smoothie cups, so it may convert you if you give it a go 🙂

      Yum! This sounds delicious! We are firmly in the brown/purple camp here 🙂 My kids love kale/banana/blueberries/strawberries. Berries seem to be a favorite of the kids, so I do whatever they like! I will definitely have to try this one though.

        My kids love the berry smoothies too - especially if it makes the drink super purple! I was a bit dubious as to whether this one would go over well, given it's intense greenness - however apparently calling something a 'dinosaur smoothie' makes it so much more exciting, and they were licking their cups 🙂

      I am with you on the fact that I could never get passed the brown color of mixing healthy stuff together - it was just gross & so eeeww But this. This i could do & besides it has coconut in it! =)

        Oh yes, coconut makes everything better! Ugh, the brown smoothies are the worst!! I seriously tried every combination for months, and it all turned out the same horrible colour - glad I got over that bump 🙂

        I use a lot of spinach as well, but I think I am actually becoming more of a kale fan! Oh my goodness, you definitely need a vitamix - I use mine every single day, they are the best 🙂 (slightly obsessed over here!)

        Thanks for stopping by Roxanne. This is a great one to get started on, if you aren't that into green smoothies, it is pretty sweet and not too vegetabley flavoured 🙂 Plus there is coconut - and that makes everything super delicious!
